William Hill Winery Cabernet Sauvignon

The Napa Valley Cabernet Sauvignon is a supple wine, exhibiting aromas of cassis, currant and raspberry. A small percentage of grapes are whole berry fermented, contributing a softness in the tannin structure and an added richness, polished texture and earthy body. This wine pairs well with roasted meats, particularly when served with a berry or currant reduction sauce. Wild mushroom risotto or any dish featuring Portabello mushrooms would be a great match with the earthy characteristics of this wine.

William Hill Winery Chardonnay

Our Napa Valley Chardonnay is gently oak-aged on the lees, allowing the fruit to shine, displaying a smooth, creamy texture with hints of nectarine, honeysuckle and crisp apple. The result is a well-balanced wine - tantalizing on the palate with a crisp, clean finish. Enjoy this Chardonnay with many seafood dishes, such as sautéed halibut with a fresh lemon and butter sauce, grilled shrimp or salmon, or fresh crab cakes. This wine also shines when paired with a simple pasta salad, delicately sprinkled with fresh Parmesan, Asiago or Gruyere cheese.

William Hill Winery Merlot

The William Hill Winery Merlot is produced from fruit grown mainly on the benchland just south of Stags Leap in Napa Valley. Merlot from this growing region typically exhibits soft berry and raspberry flavors. Fermentation techniques for this wine accentuate the rich, ripe nature of the Merlot grape, while providing the structure to ensure proper aging. Using partial whole berry fermentation softens tannins, allowing the fruit flavors and succulent texture - the hallmarks of fine Merlot - to shine on the palate. The finished wine features rich, ripe crushed blackberry and blueberry flavors with a layer of oak complexity and a soft tannin finish that is pleasing on the palate. This full flavored Merlot is a great match for grilled beef or lamb. Also pairs nicely with simpler fare, such as fresh herb and tomato pasta, barbecued hamburgers or pizza.

William Hill Winery Reserve Cabernet Sauvignon

Our Reserve Cabernet Sauvignon is a complex and fruit-forward wine with generous oak spice notes. The vines from our estate on Silverado Bench, with its rolling terrain and rocky soils, produce tiny berries in long, loose clusters that possess intense, full-bodied flavor. The wine features ripe, forward black cherry and berry flavors. French oak aging integrates supple vanilla characteristics that balance well with the lush, cassis-laden Cabernet Sauvignon fruit. This is a big, rich Cabernet to enjoy now or continue to age for the next ten to fifteen years. This wine works beautifully with a succulent roast leg of lamb, beef tenderloin or rib roast.

William Hill Winery Reserve Chardonnay

Our Reserve Chardonnay offers elegant, lush fruit flavors, complemented by toasty oak and spice notes gained by a regimen of French oak barrel aging. Full malolactic fermentation contributes a wonderful, lingering hint of butterscotch. Shellfish, seafood and poultry are superb matches for this elegant Chardonnay. With its supple oak flavors, this wine is also an excellent companion for veal or pork, especially dishes that feature a cream sauce.
