This is a beautifully crafted tequila starting with wood-fired vs. steam cooked agave. You're getting the essence of an artesanal mezcal that's classified as a tequila. I haven't found a mezcal that suits my palate, but fell in love with the near perfect balance of smoke, agave, pepper, citrus, mint, minerals, and buttery mouthfeel. Not for everyone, but certainly a journey for those not used to the smokiness typical of a mezcal. I hope Saratoga restocks.
