Best's makes one of the strongest examples of this uniquely Aussie style, which has been a part of Aussie wine since 1881. There's a pleasant lift of sweet, plump plum and berry fruit, with gentler notes of chocolate and savory spice. The bubbles almost take you by surprise. They're vigorous when first poured but quickly settle. There's some fruit sweetness and alcohol warmth, with smudged charcoal tannins. Full bodied yet bubbly, this wine is made for wintertime holidays, but chill it down and you could also sip it with a summer barbecue.

Varietal: Champagne Blend

The careful blending of Chardonnay and Pinot Noir varietal grapes has long been the secret to the success of the famous sparkling wines of the Champagne region. The wines of this region have gone down in history as the finest example of France's sparkling produce, and the methods of processing the grapes in this region have been imitated in almost every wine producing country in the world. There are actually seven different grape varietals allowed to be included in a Champagne sparkling wine, although grape varietals such as Pinot Blanc, Arbanne and Pinot Gris are used less and less commonly in its production. Whilst the Chardonnay varietal grapes offer their distinctive biscuit flavor and wonderful astringency, it is the Pinot Noir grapes (most commonly used for producing beautifully light red wines) which give the Champagne wines their length and backbone.

As with much of coastal Australia, Victoria is something of an ideal location for viticulture. Situated on the south west coast of the country, across the sea from Tasmania, the Victoria wine industry has been going strong for well over a century. While Victoria was once the beating heart of the Australian wine scene, it is now only the third most productive region in the country. However, the hundreds of wineries in Victoria are renowned for their dedication to quality over quantity, and their willingness to experiment not only with the latest viticultural technologies, but also with a wide range of imported grape varietals. As such, alongside the ever-present 'Australian' grapes such as Shiraz and Cabernet Sauvignon, you're just as likely to find Viognier and Sémillon in Victoria, making it an exciting and fascinating region for wine makers and wine drinkers alike.

The Shiraz and Chardonnay grape varietals have produced the most successful and broadly appreciated results over the decades, however, in more recent years wineries have begun experimenting with a much wider range of grape varietals, demonstrating how Australian wineries are continuing to adapt and develop alongside international palates.
