The 2021 Salto Moscofilero Wild Yeast, a Mavrofilero clone actually, comes in at 12.1% alcohol, 8.4 grams of acidity and 1.5 grams of residual sugar. There's a little mouth pucker here, with the acidity dominating this fresh white this year. It adds, though, reasonable body for the brand and region to go with that tense, mouthwatering finish. Add the glorious aromatics, and this is filled with potential, invigorating and energetic. It should hold well, but this is a Moschofilero that actually needs some time, maybe an extra year in the cellar. It's all about potential right now. Drink this one next summer, not that it is completely impossible to approach now. Meanwhile, get your Moschofilero fix satisfied with the regular one from Skouras in this report, a kinder and gentler style. When I tried it again the next day, it was still vigorous and a bit tart, but a bit improved too. This, I suspect, will always do better with food. Let's start here and see how this evolves. ...
