The 2021 Chablis Sainte Claire was showing a little too much SO2 on the nose, although there seems to be decent fruit tucked behind. The palate is well balanced with a fine line of acidity, quite tensile and steely with a precise finish that deserves a round of applause. This is well-crafted. Tasted blind at the BIVB tasting in Chablis.

On the nose, notes of lemon, yellow fruits. The mouth is wrapped, balanced, and tangy. A specific wine while gluttony.

Varietal: Chardonnay

Of all the white wine grape varietals, surely the one which has spread the furthest and is most widely appreciated is the Chardonnay. This green skinned grape is now grown all over the Old and New Worlds, from New Zealand to the Americas, from England to Chile, and is one of the first varietals people think of when considering white wine grapes. Perhaps this is because of its huge popularity which reached a peak in the 1990s, thanks to new technologies combining with traditional methods to bring the very best features out of the Chardonnay grape, and allow its unique qualities to shine through. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.

To add to this, there are early written records praising the exceptional wines produced in this region dating back to the 6th century, making Burgundy one of the oldest established and still operational wine regions in the world. The region is most commonly associated with fine red wines, with Pinot Noir being the primary grape varietal grown on its rolling hillsides and gently sloping valleys. However, Chardonnay grapes are also produced in abundance for the production of their fine white wines, with both varietals benefiting greatly from the region's warm, hot summers and the superb soils which make up the terroir.
