Over two decades ago, Guy Devaux came to the US from the Champagne region of France, charged with finding the ideal climates and soils to produce great sparkling wine in the méthode champenoise tradition. After four years of intense study, Guy chose the ideal conditions of Napa Valley for the home of these great new wines: Mumm Cuvée Napa. Mumm Cuvée Napa draws from the rich heritage of Champagne Mumm while integrating a unique Napa Valley style to make internationally respected wines of excellent quality. Vice President and General Manager Rob McNeill and winemaker Ludovic Dervin carry on the inspiration that began with Guy Devaux in making Mumm Cuvée Napa wines, bringing the ripe character of Napa fruit to the forefront while maintaining the classic balance and structure necessary in an outstanding sparkling wine. These wines are led by the prestige cuvée DVX, named in honor of Guy Devaux and one of the most honored California sparkling wines each vintage.
The naturally ripened fruit selected from more than 50 separate vineyards yields a beautiful rose petal aroma. Further layers reveal crisp yet creamy qualities, rich and lingering. Individual lots are kept separate during initial fermentation in order to highlight their vineyard differences and make the most of their specific strengths. The end result is a hugely popular, award winning wine with touches of vanilla and melon, with firm acid and crisp structure. Medium bodied, with excellent mousse and a rich lingering finish, it pairs beautifully with grilled poultry, shellfish such as oysters, prawns and mussels, as well as brioche with portobello mushrooms.
The 1997 Blanc de Blancs is lively and assertive on the palate, with flavors that echo the aromas with a light touch of grapefruit. The Pinot Gris adds a full, fleshy body with spicy accents. The wine sports a long finish of citrus flavors with interesting notes of marzipan.
Blanc de Noirs, literally "white of blacks," is a sparkling wine made primarily from dark skinned grapes. In Californian sparkling winemaking, blanc de noirs is used to describe slightly colored wines that range from light golden colors to rosé. It is a delicate balancing act to create a superior Blanc de Noirs - the grape skins must be quickly removed from the juice after the grapes have been crushed to prevent the grape's dark skin from transferring too much color to the wine. This wine is a triumph of that skill by our winemakers and their team.
Crowned by many as the "vintage of the century" the 1997 DVX lives up to the expectations. In appearance, the wine is a soft pale yellow complemented by strokes of gold with very fine bubbles rising to a persistent mousse. The aromas are elegant and complex showcasing fresh fruit characteristics of apple, pear, melon and raspberry with subtle buttery notes and layers of fresh bread dough with hints of vanilla and honey. On the palate crisp citrus and green apple characteristics that are contributed by the Chardonnay accentuate the creamy mouthfeel. This harmony of Chardonnay flavors is balanced by the cherry and raspberry notes of the Pinot Noir and highlighted with a touch of toasted nut.
