Winery
The tender Riesling grapes for this Icewine were picked in Niagara-on-the-Lake when the temperature first dipped to -10°C. After each grape was pressed while still frozen to release its individual drop of pure extract, the juices were fermented at a cool temperature to retain fruit concentration before aging in stainless steel tanks. This wine's fruit flavours of orange, nectarine and lemon drop make it a wonderful choice for mixing with vodka into an Icewine Martini. It's also delicious with rich paté, foie gras, creamy blue cheeses, Manchego and aged Canadian cheddar. With the dessert course, it's a natural match for lemon pound cake, apple strudel, pineapple upside cake and poached pears. Enjoy now through 2018 in small white wine glasses at a well chilled 8 to 10°C.
