Zephyr “Agent” is a blend of 50% Sauvignon Blanc, 30% Riesling and 20% Gewurztraminer that was handpicked and fermented as whole bunch/cluster for 69 days – whence it was basket pressed and placed in stainless barriques to relax for 8months before racking off lees leaving for a further month. The resulting wine was bottled by hand. There is no oak on the wine. On bottling a small amount of sulphur was added (40 ppm total) apart from that the only attention it got was at the right times. Natural Wine "Fruity and aromatic with a distinctly dry finish. The fruit is tropical with vibrant acidity, complimented by intense floral aromatics and a touch of clean salinity on the end. Serve with fried soft shell crab and hush puppies." Certified Sustainable
