All the guest winemakers that take part in the Lecciones de Vuelo joint venture with Viña Zorzal are offered to produce their interpretation of the paraje Corral de los Altos in Fitero. The 2018 Corral de los Altos is Zorzal's own interpretation of a 45-year-old plot of 2.1 hectares of Garnacha planted on a north-facing stony part of the village. The grapes fermented in stainless steel with some 25% full clusters and indigenous yeasts and matured in seven used (second and third use) 500-liter oak barrels. This has contained ripeness and a medium to full-bodied palate with the classical chalky tannins and texture from the limestone-rich soils and the length and tastiness they provide. 4,600 bottles were filled in January 2020. ... From the northernmost parcel of a single vineyard in Fitero, a rocky site located on the top of a high plateau where the “Cierzo” wind takes a key role. It is 2 hectares planted with 45 year old Garnacha. Grapes are picked early, the wine ferments from native yeasts spontaneously in 2000-liter wooden vats. Aged 9 months in used French barrels before release.

The Grenache grape varietal has its origins in the dry and arid regions of central Spain, where it continues to thrive to this day under the blazing sun of this region. However, its popularity and versatility has meant that these purple skinned grapes have spread all over the Old and New World and have become of the most widely planted grape varietals on earth. The tightly bunched, round fruit of the Grenache vine can be rigorous and prodigious in the correct conditions, but is often struggling against various types of rot and mildew. Thanks to modern techniques for avoiding such problems, Grenache grape farmers now enjoy strong and high quality yields which they can use to produce the distinctive light bodied and spicy wines associated with this grape.
