A touch of vanilla-laced pastry cream sweetness accents this fresh and focused Champagne, with a fine mousse. This is well-balanced by crunchy acidity and flavors of lemon peel, green pear and spring blossom.

A fresh, clean champagne with sliced apple, pear and lots of mineral character. Full to medium body, crisp acidity and a long finish. Lots of citrus undertones. Bright and steely. This is mostly 2009, with the remainder from reserve wines. Four years on the lees. This is very focused. 50% chardonnay and 50% pinot noir.

Featuring, as usual for this cuvee, a relatively high proportion of Chardonnay; no Meunier; and 15-20% reserve wine, Henriot’s NV Brut Souverain Disg. 4/2012 offers a delightfully crunchy-yet-creamy, slaw-like amalgam of fresh apple, celery root, grapefruit and almond, to which a whiff of elder flower adds aromatic allure. The lush mid-palate takes a faintly oily turn even as tart citricity wells up with greater impact, leading to a luscious finish that irresistibly urges one take the next sip. I fancy this being best enjoyed over the coming year.

Brut Souverain is almost equal parts chardonnay and pinot noir, with five percent pinot meunier; reserve wines account for 30 percent of the blend, enriching it with bready notes and almond-like touches of maturity. The richness gives it a sweet impression, integrated into the tangy notes of cider and mint, then lasting on chalky savor. This would make a rich aperitif, or a partner to thinly sliced roast veal. Varietal: Champagne Blend

Whilst Champagne sparkling wines are most commonly made with a blend of Chardonnay, Pinot Noir and Pinot Meunier grape varietals, there are actually seven fine grape varietals allowed by French wine law for inclusion in the wines of this region. These include Arbanne, Pinot Gris, Pinot Blanc and and Petit Meslier alongside the others, although these four are being used less and less in the modern age. Champagnes are normally blended wines, although the popularity of single variety 'blanc de blanc' Champagnes made solely with Chardonnay grapes, and 'blanc de noir' wines made only with Pinot Noir varietal grapes are becoming more and more popular. The blending process found in most Champagnes aims to take the finest points of each grape varietal and bring them together to produce spectacular, strong yet balanced results in the bottle.
