The lightly smoky sea-breeze aroma entices on the nose. The palate opens with bolder peat smoke underpinned by vanilla and coconut, finishing with a mouthwatering salt-and-pepper accent. Adding water pulls it all together, creating an effect like vanilla cookies sprinkled with coarse sea salt, plus a puff of peat smoke. This was matured in ex-Madeira casks for two years, then transferred to Mizunara oak for ocean maturation for a final six years. ... More details

Winery
Kaiyo whisky is matured in the finest Japanese Mizunara oak casks. These casks are handmade due to Mizunara oak’s delicate wood grain. They are among the rarest casks in the world and are considered the finest in which to mature whisky. After years of maturing our casks go on a final maturation at sea voyage for up to 3 months, leaving from Osaka Japan.

Country: Japan

Japan has been producing their characteristic plum wine and sake, a rice wine, for many centuries, with the earliest written recordings of such drinks being enjoyed dating from the 3rd century. It has gradually become more and more popular in the western world, and high demand for such goods has seen a boom in plum wine and sake production all across Japan. High quality sake is especially in demand, and there are currently several AOC style designated appellations producing this aromatic and fascinating ancient beverage. In Japan, both sake and plum wine are usually served with food, or kept for ceremonial purposes and greeting guests, and the west's ever growing fascination with Japan and Japanese cultures means we can expect to see far more of this type of produce in the near future.
