100% Chenin Blanc. From a combination of certified-organic estate fruit and some sourced fruit. Whole-cluster press; fermentation with native yeasts in tank; aged in tank on its fine lees until spring following the vintage. It is a dry style (hough there may be a gram or two of residual sugar in some vintages). The wine is named for owner-founder Paul Filliatreau's Swedish wife Lena. Paul F. ripped out most of the original Chenin vines back in 1990 to make room for more Cabernet Franc but in recent years planted 2 hectares of Chenin in Brézé, 10 kilometers east of Saumur near Filliatreau's Château Fouquet plot.
