This was aged in Japan's rare Mizunara oak for the entirety of its maturation, which includes three-month ocean maturation. Look for a tawny hue and orange peel and spice aromas. The light palate opens with charred oak, burnt orange peel and clove. Adding water brings out more honey, cayenne and cinnamon, plus distant campfire smoke. ... More details

Fully matured in mizunara oak on land and sea, this has tangy orange, ground ginger, fennel seed, cedar, and incense, though it seems a little more tightly wound than the standard strength whisky. Juicy orange, quick firecracker spices, and more toffee sweetness; it becomes heavy and thick, flaunting high alcohol, then turns creamier with marzipan, orange Jell-O, and singed oak spices. - Summer 2019
Winery
Kaiy? Cask Strength extremely smooth with great complexity and a lovely balance of fruit, silky malt, and a touch of dark chocolate.

Country: Japan

For almost two thousand years, Japan has been producing high quality alcoholic drinks made from the ingredients available to them on their rich and fertile soils and mountainsides. The most popular and highly esteemed 'wines' of Japan are undoubtedly sake, a type of fermented rice wine, and the delicious, sweet and aromatic plum wines which are widely loved around the world. Both drinks are inextricably linked with Japanese cuisine and culture, and both are growing in popularity in the western world along with many other aspects of this amazing and unique country. Because of this boom in popularity over recent years, the sake and plum wine industry of Japan has remained strong, and it continues to be an industry steeped in tradition and many fascinating practices undertaken to keep quality at a high level.
