Salão Frio (or Cold Room) is a village in the middle of the hills of São Mamede in Alto Alentejo, Portalegre. Soils here are a mix of clay and granite, and the high altitude makes the region a little colder than the rest of Alentejo. This wine is made of a field blend of old vines of Aragonez, Castelão, Arinto, Tamarez, Grand Noir from two different plots, one south-facing, and the other north-facing. Whole bunches macerated in stainless for 60 days. Softly pressed and aged in French oak barrels for eight months. The wine also aged two years in bottle before being released.
