This history-minded bottling was made in collaboration with Brooklyn barmen Damon Boelte and Maxwell Britten. It’s made from an 18th-century recipe, pot distilled using “exotic spices inspired by the British Spice Trade,” and finally, aged for 12 months in Bourbon and oloroso Sherry casks. All that adds up to a light gold hue, light sweetness (typical of the Old Tom style) and a pleasing, robust vanilla-mint profile with flecks of rosemary and lemon peel, finishing long and spicy. Greenhook Ginsmiths has released a masterful expression of Old Tom Gin. Paying homage to distillers of 18th century England, this Gin is pot distilled from 100% corn. It offers strong but delicate aromas of allspice, citrus, chamomile and coriander, while maintaining it’s juniper-infused identity. Sitting at 100.1 proof, Old Tom is rounded off with a touch of sugar to temper the gin’s fiery nature. Old Tom drinks fantastically in belly-warming fall and winter cocktails!

New York state has a relatively long history of wine-making and vineyard cultivation, with vineyards in the region dating back to the Dutch settlements of the 17th century. As such, the region has slowly discovered the unique qualities of their terroir, and has developed a distinctive set of grape varietals which have gone on to represent the state and make their wines both unique and highly regarded. New York state has four key wine producing areas – Lake Erie AVA, Finger Lakes AVA, Hudson River and Long Island, each making the most of their relatively cool climate and characterful terroirs. The strong blend of both traditional and contemporary wine making methods found in this region has led to New York state being responsible for many of the finest and most interesting wines to come out of the United States.
