Vermouth

Vermouth is a fortified, aromatized wine infused with a blend of botanicals, herbs, and spices. It is made by taking a base wine, fortifying it with neutral spirits, and flavoring it with a variety of ingredients, including wormwood (Artemisia absinthium), which is legally required for vermouth, along with citrus peels, cloves, cinnamon, and chamomile. Vermouth is traditionally categorized into two main styles: Dry (white) vermouth – Crisp, herbaceous, and often floral, commonly used in Martinis. Sweet (red) vermouth – Rich, slightly bitter, with caramelized and spiced notes, essential for cocktails like the Negroni and Manhattan. Originating in Italy and France, vermouth is a key ingredient in mixology but is also enjoyed neat, over ice, or with soda as an aperitif. French vermouths are known for their dry, delicate character, while Italian vermouths tend to be richer and more herbal. Its complex balance of bitterness, sweetness, and aromatics makes vermouth a staple in both classic and modern cocktails.

The history of South African wines is a fascinating and surprisingly long one, with the very first wines in the country being produced by settlers in the 1650s, long before many other New World countries had even been discovered. Today, coastal South African wines are wildly popular around the world thanks to their big, fruity flavors and relative simplicity. Wineries in the region make the most of the hot sunshine, the high quality soils, and the brisk oceanic winds which keep disease at bay and stop the grapes from getting too hot, and produce a wide variety of wines of great distinction.

Copper-orange color. Knockout, endlessly complex perfume of orange blossom, cinnamon Red Hots, clove, ginger and mint. A silky, umami-like texture is utterly seamless and smooth. Hints of griotte cherry, orange zest, fynbos and tree bark are lifted by a strong spicy character. Wonderfully complex, moderately sweet and long, with a finishing note of bitter orange giving the finish a drier quality and great refreshment value. I bet you can’t drink just one glass. In partnership with Danish mixologist Lars-Erik Schmidt, Adi Badenhorst reinvented an old South African product that disappeared in about 1910. Serve it on its own over ice with a slice of lemon, or with club soda. It’s also remarkably versatile in cocktails. (Vinous)
