Foss Distillery specializes in the use of Icelandic Botanicals and amazingly energy efficient vacuum distillation. Björk, which means “Birch” in Icelandic, is one of the first two products to be made by Foss. Björk is a fragrant, all-natural, Icelandic Liqueur handcrafted from Vacuum Distilled Spirit, infused with Icelandic Birch that has been handpicked in the Spring, and finished with Icelandic Birch Syrup. Foss’s aim with Björk was to capture the experience of a Spring night in Iceland; the moment when, after the rain has cleared, the dew settles on the leaves of the birch trees on a wooded hillside. The Birch Sprigs in each bottle are individually hand-culled from a forest in Iceland, and are used in the distillation process. Not only do they add a special touch to the appearance of the product, they reduce waste and contribute to Foss’s emphasis on sustainability. The still uses zero energy to maintain temperature. It operates solely through the temperature differential between the geothermal hot water, and the cold water from the taps. The only electricity needed is hydro power to prime the vacuum pump itself!
