There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Tasted at Bordeaux Index's annual 10-Year On tasting in London. The 2006 Château Pavie has a rich, generous, almost opaque bouquet with raspberry coulis, crushed strawberry, vanilla and melted tar, very well-defined and focused - perhaps more so than the 2006 Angelus? The palate is well balanced with fine tannin, a keen line of acidity, very harmonious in the mouth with black cherries, wild strawberry, citrus fruit, a touch of tar and tobacco developing towards the finish. It leans towards Cheval Blanc in style, but whatever its semblances, it remains a very well-crafted Saint Emilion with a long future ahead. Tasted January 2016.

Always ripe, always velvety and dense in texture, Pavie's 2006 nevertheless also shows more structure and elegance than in the past few vintages. The result is a great wine, with smoky, rich fruit and a dense, concentrated core of sweet tannins, chocolate and fresh raspberry flavors. While it is seductive now, it really needs many years of aging. (Cellar Selection)

Deep garnet with a touch of brick, the 2006 Pavie storms out of the glass with powerful scents of baked plums, boysenberry preserves, and licorice leading to hints of tar, unsmoked cigars, and garrigue. The medium to full-bodied palate delivers youthful black fruits and earthy/minerally accents with firm, fine-grained tannins and bags of freshness, finishing with a chalky lift.

Hitting its stride now, with alluring singed juniper and apple wood notes that have melded nicely with the core of lightly steeped red currant and blackberry fruit. A graphite edge runs underneath and the finish pulls everything together, adding a warm tobacco accent.--Non-blind Pavie vertical (March 2017). Drink now through 2030.

The 2006 Pavie is now showing a little bricking on the rim. The bouquet is a little Bretty though not the worst you will find, with red berry fruit, menthol, star anise and light tarry scents. The palate is medium-bodied with a rather medicinal but decent entry, quite dense tannins and a heady, opulent finish. It does not offer much in the way of grace or terroir expression compared to more recent vintages that I find superior.
