The one sparkling wine, vinified with a Champagne method with a Jerez accent, is the 2021 Viña El Corregidor de Carrascal. It fermented partly in stainless steel and partly in cask and matured in Fino casks with lees for one year and then was put to referment in bottle with PX must from the following vintage and was kept in bottle with the lees for three years. Even at this early stage, you can feel the chalkiness in the texture, the Sherry character and the electricity and saltiness. It has small bubbles and a vibrant sensation in the palate, with 12% alcohol and 6.62 grams of acidity. Bubbles amplify everything, and the spiciness and curry here are a lot more evident, even when young. There’s more finesse this year. 4,200 bottles produced. it was disgorged in September 2025.
