The NV Amontillado Secular is a Pedro Ximénez from Montilla-Moriles, drawn from a 20-year-old solera. It shows dried apricot, date, cashew, rubber and marked oxidative tones. Intense, dry and saline, with the chalky austerity of flor and nutty persistence, it finishes with slight alcoholic lift, despite not being fortified. I tasted a bottle from Lot 5094.
