• 100% Gamay Noir. • Lahoma Vineyard (Seneca Lake AVA). • Cold soaked for 3 days in stainless tank. • Fermented in 650 gallon French oak tank. • Three to four punchdowns per day during fermentation. • Pressed off the skins after 6 weeks of daily punchdowns. • Wine pressed off into old-fashioned screw press then returned to original oak tank. • Aged on the lees for 8 months.
