The 2006 Cuvée Nicolas François Billecart is shaping up to be a jewel of a wine, but it needs time to be at its best. I am surprised by how tightly wound it is. But that only makes me think what it might develop into with time in the cellar. Lemon confit, white flowers, mint, crushed rocks and sage meld together in a bright, crystalline Champagne endowed with terrific purity. The 2006 is 60% Pinot Noir from the Montagne de Reims and the Vallée de la Marne and 40% Chardonnay from the Côte des Blancs, mostly done in steel, with just a touch of oak, around 5%. Dosage is 6 grams per liter. (Originally published in August 2020)

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

A rounded vintage, with very attractive white peach, apricot and nectarine fruits as well as lemon and yellow grapefruit, dried flowers, orange rind and some clotted cream. The palate has an assertive, sturdy and punchy feel to it. Bright acidity that's lime sorbet-like. Good length and plenty of fresh stone fruit flavors. Fleshy and lively. Drink this now.

The 2006 Brut Cuvée Nicolas François is showing superbly, bursting with aromas of warm bread, citrus oil, wild berries, smoke and gingerbread. On the palate, it's full-bodied, broad and voluminous, with a concentrated and fleshy core, chalky dry extract and lively acids despite the vintage, concluding with a saline finish. It was disgorged in April 2018 with 5.5 grams per liter dosage, and it's the usual blend of 60% Pinot Noir and 40% Chardonnay, derived from Verzenay, Ambonnay, Ay and Mareuil-sur-Ay, as well as the Grands Crus of the Côte de Blancs, emphasizing Mesnil.

Named after the founder of the house, Nicolas François Billecart (who married Elisabeth Salmon), this wine is now at its peak. It is poised between fresh apple fruits and broader, riper maturity. This balance gives a ripe wine hinting at toast and almonds while still with a dry aftertaste. Drink now, although in 2019 it will be even better. (Cellar Selection)
