The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

Disgorged in January 2023 with a dosage of 5.4 grams per liter, the 2016 Collection N°16 Blanc de Blancs offers an expressive bouquet of nashi pear, white peach and lily, mingling with lemon zest and quince. On the palate, it is medium- to full-bodied, ample and textural, laden with racy acids and enlivened by a pillowy mousse, before concluding with a long, precise finish. Composed of 50% Chardonnay and 50% heritage varieties—Arbane, Petit Meslier and Pinot Blanc—it is a fleshy and charming Champagne, ideally suited for gastronomic pairings at the table.

This is one of those wines where I like one part but not another as there is fairly prominent reduction on the nose that pushes the fruit to the background. By contrast, the palate impression of the middle weight flavors is fresh, vibrant, highly complex and sophisticated with excellent length on the agreeably dry and refreshing finish. As such, my rating is a compromise, at least for now as it's not necessarily a given that the reduction will remain as prominent as it is today.

Composed of 50% Chardonnay, N°16 is in keeping with the DNA of the AYALA style by magnifying its favourite grape variety. The House is reinforcing its legitimacy and know-how in the art of blending, as well as its expertise in white grape varieties, by combining Chardonnay with 3 other forgotten white grape varieties of Champagne: Arbane, Petit Meslier and Pinot Blanc.
