Disgorged in July 2021 with six grams per liter dosage, Ayala’s 2013 Brut La Perle is showing brilliantly, offering up aromas of crisp white peach and other stone fruits mingled with hints of shortbread, beeswax and flowers. Medium to full-bodied, suave and seamless, it’s elegantly vinous, with a textural attack that segues into an ample, vibrant mid-palate that’s animated but not dominated by the vintage’s tangy acids. This Chardonnay-dominant cuvée is a terrific success this year.

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

The softness and length to this is very precise, with a creamy texture. Bread dough, apple tart tatin and salted butter. Yet always subtle. Very long and alluring. 80% chardonnay Chouilly, Mesnil and Cramant. 20% pinot noir from Ay. 8 years on lees. 6 g/l dosage. Drink or hold.

Ayala's top release continues its impressive renaissance with a typically precise yet approachable 2013 led by crystal-clear Chardonnay flavours of white peach, orange citrus, hazelnut and delicate white pepper spice. It shows more of the elegance and delicacy of the year than any sense of austerity, although the small amount of Pinot Noir structure lends a touch of weight. Delightfully silky, cool and calm, this under-the-radar prestige cuvée is highly promising. 80% Chardonnay and 20% Pinot Noir, all grand cru. All vinified in stainless steel with eight years on lees.

A vibrant, minerally Champagne, with a fine, lush mousse, this shows notes of smoke, oyster shell and ground ginger and anise accenting flavors of quince paste, green almond and blood orange gelee. Well-knit and harmonious. Chardonnay and Pinot Noir. Disgorged July 2021. Drink now through 2028. 40 cases imported.

There is a strong quinine character suffusing the moderately yeasty, cool and beautifully elegant aromas of lemon-lime, just sliced apple and brioche scents. The rich full-bodied and quite powerful flavors are shaped by a firm and moderately fine mousse yet even so, the mouth feel of the highly complex, appealingly dry and impressively persistent finish is not especially refined. I quite like this and while it won't make you think of lace and grace, it certainly doesn't lack for character and is a wine that could easily be served with any number of dishes. I would note that while this beauty is almost drinking well, I personally would opt for holding it for another 2 to 5 years as more depth will almost certainly develop.
