An austere wine with intense aromas of minerals, oyster shells, chalk, roses, geraniums, lemon peel and pastry. Varietal Champagne Blend

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

Region Champagne

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

The NV (2022) Extra Brut Les 7 is a blend of the seven permitted varieties in Champagne, based on 2022 but with 60% reserve wines from a mini-solera that dates back to 2005. Dried apricot, marzipan, chamomile and lightly honeyed accents fill out the layers gracefully. There's a lot to admire in Les 7, starting with its understated complexity and dynamic energy. Dosage is 3 grams per liter. Disgorged: December 2024; multiple disgorgements throughout the year.

The wine incorporates 50% from a perpetual reserve established in 2005 and comprises a field blend—18% Chardonnay, 18% Pinot Meunier, 17% Pinot Blanc, 15% Petit Meslier, 14% Pinot Noir, 10% Pinot Gris, and 8% Arbanne—pressed and vinified together. It opens with aromas of white flowers, ripe pear and pastry. On the palate, it’s medium-bodied, bright and incisive, with a rather slim musculature, concluding with a long, precise finish.
