The NV (2022) Extra Brut Les 7 is a blend of the seven permitted varieties in Champagne, based on 2022 but with 60% reserve wines from a mini-solera that dates back to 2005. Dried apricot, marzipan, chamomile and lightly honeyed accents fill out the layers gracefully. There’s a lot to admire in Les 7, starting with its understated complexity and dynamic energy. Dosage is 3 grams per liter. Disgorged: December 2024; multiple disgorgements throughout the year.
