Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Australia

Whilst most of Australia consists of arid deserts and dense bushland, the oceanic coasts to the south of the country have a terrain and climate ideal for vine cultivation and wine production. It took several decades of failed attempts at the end of the 18th century in order to produce vines of a decent enough quality for making wine, but since those first false starts, the Australian wine industry has continued to grow and grow. Today, wine production makes up for a considerable part of the Australian economy, with exports in recent years reaching unprecedented levels and even overtaking France for the first time ever. Whilst the greatest successes in regards to quality have been the result of the Syrah grape varietal (known locally as Shiraz), Australia utilizes several Old World grapes, and has had fantastic results from Cabernet Sauvignon, Merlot, Riesling, Chardonnay and more. As the Australian passion for locally produced wine continues to develop, wineries have begun experimenting with a wider range of grape varietals, meaning that nowadays it isn't uncommon to find high quality Australian wines made from Petit Verdot, Sangiovese, Tempranillo and Viognier, amongst many others.

South Australia

The vast region of South Australia is home to a wide variety of vineyards, growing a large range of different grape varietals. Because the South Australian wine region is so large, it benefits from a great array of climatic conditions – from dry and hot, to cool and windy – which wineries can use to their advantage when it comes to selecting the grape varietal they wish to thrive in a particular sub-region. South Australia is most commonly associated with the big, powerful and fruit-forward Shiraz wines which are produced in the cooler valley areas of the region, but recent decades have seen something of an explosion in the South Australian wine industry, leading to wineries expanding their repertoire enormously and experimenting with other fine grape varietals and making the most of their unique terroir.

Cabernet Sauvignon has provided a high point in Penfolds tastings through recent years, and this beauty seduces from the first whiff. Showing note-perfect varietal aromas, with a breeze of ripe purple fruit over fresh, leafy herbs and rich red earth, the perfume is full and persistent. The entry is sharp and arresting, with fruit purity on point and channelled down the right corridors by supple tannins and a clean acid seam. It shows exemplary balance through to the long finish.

Polished from top to bottom, this red boasts fine-grained tannins, offering a generous core of blackberry and cassis flavors that show accents of cured black olive, sandalwood and vanilla-laced cedar, with a whiff of peppermint and dried sage, all harmonious on the long finish. While the 2019 Bin 407 Cabernet Sauvignon shows ample concentration and ripe tannins, there's a pervasive herbal note. While some will call it Cabernet's varietal character—and I won't dispute that a bit of pyrazine is indeed endemic to the Cabernet family of grapes—balance is key. To this taster, there's just a bit too much mint and other green stuff for me to go gaga over the 2019 Bin 407. It's still an excellent wine, with plenty of weedy cassis fruit, a ripe, lush feel on the medium to full-bodied palate and a velvety, dark-chocolate finish. Sourced from Padthaway, Coonawarra, Wrattonbully, McLaren Vale and Barossa Valley, it spent a year in a combination of French and American hogsheads.
