Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Whilst most of Australia consists of arid deserts and dense bushland, the oceanic coasts to the south of the country have a terrain and climate ideal for vine cultivation and wine production. It took several decades of failed attempts at the end of the 18th century in order to produce vines of a decent enough quality for making wine, but since those first false starts, the Australian wine industry has continued to grow and grow. Today, wine production makes up for a considerable part of the Australian economy, with exports in recent years reaching unprecedented levels and even overtaking France for the first time ever. Whilst the greatest successes in regards to quality have been the result of the Syrah grape varietal (known locally as Shiraz), Australia utilizes several Old World grapes, and has had fantastic results from Cabernet Sauvignon, Merlot, Riesling, Chardonnay and more. As the Australian passion for locally produced wine continues to develop, wineries have begun experimenting with a wider range of grape varietals, meaning that nowadays it isn't uncommon to find high quality Australian wines made from Petit Verdot, Sangiovese, Tempranillo and Viognier, amongst many others.

Limestone Coast

The Limestone Coast of South Australia is one of the country's most important wine producing regions, with almost one third of all Australian wines originating there. As the name suggests, this stretch of coastline is geologically significant, being made primarily of mineral rich limestone, and thus providing plenty of nutrients for the range of grape varietals that thrive there. Interestingly, unlike many of the wine regions of Australia, the Limestone Coast has a healthy water table, meaning there is plenty of moisture below the soil, and thus solving any problems relating to irrigation that causes difficulties for wineries elsewhere in the country. Plenty of different vines flourish in this fertile region, most notably Cabernet Sauvignon and Shiraz, and also many white wine varietals such as Chardonnay and Viognier.

Very deep garnet-purple colored, the 2008 Bin 620 Coonawarra Cabernet Shiraz (a blend of 51% Cabernet Sauvignon and 49% Shiraz) is a little restrained on the nose, presenting earthy, black truffle, moss covered bark and loam aromas over gentle notes of cassis, crushed blackberries, chocolate mint and pencil shavings, plus a fragrant whiff of cloves. Medium to full bodied, very ripe and rich in the mouth, the complex, layered fruit is densely packed and well supported by firm, finely grained tannins and very crisp acid. The finish is very long with a subtle hint of mint interspersed with warm berries, vanilla and baking spices. Consider drinking it 2015 to 2025+. Only about 900 cases were made of this wine.

Lasts for minutes on the palate. 51% Cabernet Sauvignon and 49% Shiraz. Aged in 57% French and 43% American. 100% new. Twelve months. Needs five years. November 17 launch in Shanghai. It is all Penfolds vineyard blocks in Coonawarra. 600 cases made.
