The nose is complex and inviting, with Bosc pear and Pink Lady apple layered with honey, gardenia, white rose, and wildflowers. The palate is medium bodied and supple, showing orange pith and grapefruit oil, with a fine thread of vanilla lingering on the finish. Fresh acidity and a gentle oily texture make it an excellent match for rich pork dishes.

Of all the white wine grape varietals, surely the one that has spread the furthest and is most widely appreciated is Chardonnay. This green-skinned grape is now grown all over the Old and New Worlds, from New Zealand to the Americas, from England to Chile, and is one of the first varietals people think of when considering white wine grapes. Perhaps this is because of its huge popularity, which reached a peak in the 1990s, thanks to new technologies combining with traditional methods to bring the very best features out of the Chardonnay grape and allow its unique qualities to shine through. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.

The region is highly respected as an excellent producer of Chardonnay wines, and the Chardonnay grapes which grow there, on the southern slopes of the Cote d'Or, are packed full of the unique and powerful characteristics of this very special terroir. Interestingly, Cote De Beaune produces more red wine than white wine, despite its white wines being so famous. The red wines of Cote De Beaune are mainly made from Pinot Noir, but are relatively very light and fruity in their character, perfect for sipping on a warm, sunny day alongside a wide range of foods.

Winery Notes

Les Folatières is the largest Puligny premier cru and one of the best known thanks to its size and the quality of its wines. The name “Folatières” comes from folles-terres meaning “crazy earth” and refers to the eroding soil of this site. It sits high up on the hill above Clavoillons with meager soil resulting in a full-bodied wine with plenty of minerality and grip. Xavier’s plot was purchased by his grandmother with parcels planted between 1959 and 1973. Aged from 12 to 14 months in 30-35% percent new French oak.
