The 2015 The Signature Cabernet Sauvignon Shiraz is now 10 years from its harvest, and the wine has developed beautiful soft leather, dark chocolate, mulberry and peppercorn notes. It features a combination of French, American and Hungarian oak. The wine is perfectly comfortable here, sedate, complex and settled. It's a beautiful wine and one that gets better and inevitably softer as it gets older. It features 20% Eden Valley fruit, although that number varies each year depending on the seasonal conditions. I really appreciate the tannins here; they're pulverized, soft and fresh. 14.5% alcohol, sealed under natural cork.
This has a very attractive, blackberry and red-plum nose with some leafy elements, as well as plenty of oak spice and hints of black tea. This has a fleshy, supple, bold and round palate. Very supple, sleek and long. Silky, yet sturdy. Very drinkable now and will last a good two decades. A vinous slam dunk! Drink or hold.
Limpid ruby. A complex and finely detailed bouquet evokes red and dark fruit preserves, pipe tobacco, smoky oak and candied rose and a succulent herb nuance builds in the glass. Offers bitter cherry, mulberry, cola, floral pastille and spicecake flavors, along with hints of vanilla and mocha. The smoky note recurs on an impressively long, floral- and spice-driven finish that's framed by smooth, even tannins.
Honouring Barossa vineyard manager Darrell Kruger’s service (since 1975), the expressive nose reveals blueberry fruit, eucalyptus hints and mocha oak. Dried herbs, liquorice, chocolate, an ironstone tang and smoky espresso lend savoury nuance to the sweet plum and tighter-knit blackcurrant and berry flavours. Creamy vanilla oak (18% new) sheathes the firm backbone of tannin on a sustained, savoury and mineral finish.
A seamless affair. Tobacco, blackcurrant, plum and malty oak sing in beautiful harmony, firm tannin singing from the same integrated songbook. Mint and dried herb notes make qualified contributions too. It doesn't have a lot of spunk, but it puts not a foot wrong.
This premium cuvée from Yalumba is classic Barossa. An almost 50-50 split of Cabernet Sauvignon and Shiraz, it is rich and muscular yet restrained and balanced. It weaves notes of chocolate, plums, cherries, licorice, olives and ground black pepper with sweeter, cola-like notes from aging in a variety of oak barrels. The fruit on the palate feels bright and fresh thanks to a nice line of acidity. It's supported by savory, textured tannins. Drink now, with protein at hand and until 2029 at least.
This is a lush cabernet that keeps a cool profile, enriched by dark fruit and tannins that taste of coffee and bitter chocolate, even as the structure feels lovely and restrained. The wine benefits considerably from time with air, giving itself more fully a day after it’s first opened. Cellar it for a year or two, then serve with grilled lamb.
Tight and dense blackberry and black cherry flavors show notes of chalky earth, fresh herb and pepper, with plenty of restraint on the muscular frame. Short-term cellaring might help some of the flavors unwind. Cabernet Sauvignon and Shiraz. Drink now through 2035. 11,000 cases made, 400 cases imported.
Winery Notes
The aromas are all classic Signature, with red currants, cool perfumed cedar flavors and complex savoury dried herbs. Precise aromatics and classically rich through the middle palate. Showing exotic florals, cranberry and a depth of dark chocolate richness.
