There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

The climatic conditions in Saint Emilion are perfect for growing many of the Bordeaux grapes, and high yields of exceptional quality are commonplace. Fed by the mighty Gironde river and benefiting from superb clay and gravel based soils, Saint Emilion produces millions of bottles of high quality blended and unblended red wines each year, and continues to be a firm favorite of wine experts and the general public alike.

Supple and inviting, with a caressing edge to the red currant and blackberry confiture notes. Warm tobacco, cocoa and apple wood accents fill in throughout. This has melded nicely and shows a smoldering hint through the finish. Approachable now, but there's no rush.—Non-blind Pavie vertical (March 2017). Drink now through 2030. 7,335 cases made.

Saturated deep ruby, one of the darkest of all the 2007s. Liqueur-like but vibrant nose offers deep aromas of cassis, licorice, minerals, tobacco, soy sauce and bitter chocolate. Dense, sweet, slightly high-toned and powerful but with a penetrating quality and superb energy driven by an impression of mineral salts. Really wonderfully sweet and dense wine, with a thick, silky texture and superb mouth coverage. Very long and very young on the back end. Less extreme than some vintages of this wine; undeniably outsized for the vintage but fresh.

A solidly structured wine, filled with fig, bitter coffee, spice and wood over a firm structure of tannins. The freshness is quite intense, but the ripe fruit is vivid with layered acidity and new wood. This is a serious wine, for aging.

The 2007 Pavie is deep garnet with a touch of brick. It is a little broody to start, offering notes of charcoal, fertile loam, and crushed rocks before opening out to a core of stewed cherries and baked plums plus a hint of truffles. The medium to full-bodied palate coats the mouth with black and red berry layers plus loads of savory sparks, framed by lightly chewy tannins, and finishing on a lingering chalky note.

Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Pavie has a very clear, almost refulgent color in the glass. The bouquet is well defined with plush crushed strawberry, raspberry, cedar and mint aromas on the nose, almost Margaux-like in style thanks to a floral tincture. The palate is medium-bodied with grainy tannin, cedar and graphite-tinged black fruit that gently grips the mouth. There is impressive structure here, a Pavie that seems to have firmed up in recent years. As I suggested in my previous note, this is one of the few Saint Emilion wines that merit cellaring. Tasted February 2017.
