This wine is superb. With its power and structure it will age over 20 years or more. Backed by blackcurrant and jelly flavors, it shows great fruity attractiveness even at this early stage in its development. It will develop slowly and evenly to become a reference point for the vintage.

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

A beautiful moment to be drinking this wine as it edges towards tertiary flavours. Beginning to soften around the edges now, with waves of brushed leather, walnut, dried roses and earth, together with the fresh acidities of its limestone soils. Supple tannins, finessed and fine, with juicy raspberry puree and blackberry fruits. 55% new oak, harvest September 23 to 30.

I love the chocolate and blackberry character, with hints of cedar. Nicely perfumes. Full and very creamy, with soft tannins and a long finish. The tannins compliment the creamy texture perfectly, wait two more years to pull the cork. 2012.

Deep garnet-brick in color, the 2000 Canon opens with mature scents of cigar box, dusty soil, and iron ore giving way to a core of prunes, dried mulberries, and Chinese five spice with a touch of new leather. The medium-bodied palate is graceful and delicately played, with loads of mineral undertones to the dried black fruits and a powdery texture, finishing with a lively lift.

Red and black fruit, truffle, chalky minerality, and floral nuances all emerge from the 2000 Château Canon, with ripe tobacco and graphite driving the aromatics. It's not as expressive or exotic as the 2001, but it's darker, more mineral-laced, and inward, with medium body, ripe, serious tannins, and a great finish. It needs air to show at its best, and it's a beautiful, layered Canon to enjoy over the coming 10-15 years. Drink 2026-2041.

Has a slightly robust edge, with singed alder and apple wood notes giving a chewy, woodsy impression, while the core of steeped plum and blackberry confiture flavors tries to keep up. Rather roasted through the finish, with a chunky feel that winds up heavy-handed in the end. Feels more like winemaker than terroir. -- Blind 2000 Bordeaux retrospective (December 2015).
