Sherry is a fortified wine produced under strict Denomination of Origin (DO) regulations in the Jerez region of southern Spain. It must be made within the Sherry Triangle, which includes Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María. The primary grape used is Palomino for dry styles, while Pedro Ximénez (PX) and Moscatel are used for sweeter sherries.

Sherry undergoes a unique aging process, often using the solera system, a fractional blending method that ensures consistency over time. It ranges from bone dry to intensely sweet, with styles like:

Fino & Manzanilla – Crisp, delicate, and aged under flor (a protective layer of yeast).
Amontillado – Aged under flor, then exposed to oxygen, developing a nutty, richer profile.
Oloroso – Fully oxidized, dark, and full-bodied with deep caramel and spice notes.
Pedro Ximénez (PX) – Lusciously sweet with flavors of raisins, figs, and molasses.

Sherry offers a wide range of flavors, from almonds and citrus in dry styles to caramelized dried fruits in sweet varieties. It is enjoyed as an aperitif, paired with food, or in cocktails, showcasing its remarkable depth and complexity.

“Fino Amontillado” is a style of Sherry that’s virtually extinct. It was made from old wines that had almost lost their flor and had begun to oxidize, their color darkening as they gained depth and complexity. Although La Panesa is not, strictly speaking, a Fino Amontillado, it has the characteristics of those wines from the past. With an average of 15 years of aging in solera (ten more than most Finos), it takes the lifespan of flor to the limit, creating a wine that’s intoxicating in its mineral and dried-fruit fragrance. Bone dry, saline flavors drive the wine from beginning to end, their abundance leaving no room for sweetness. This is the definition of verticality and elegance.

The NV Fino La Panesa is a reference for old Fino, pushing the limits of biological aging. Bottled at an impressive old age of 15 years from a solera created in 1961, it shows a deep golden color and a nose full of dried nuts (hazelnuts), elegant, complex and balanced, with intense salinity, pungent flavors, a full, wide palate and great length. This is a superb example of how to control the power of very old, biological Sherries. As with most of the NV wines, it’s impossible to distinguish the different bottlings so it’s hard to give a drinking window, because you’ll not know how old the bottle you have is, but the wine has the stuffing to last and even improve for a good five years. This is one of the greatest Finos in existence today. Drink 2013-2018.

Winery Notes

This Fino sherry is “especial” because it comes from a special part of the bodega sourced from a very small selection of barrels within the solera. Like all the selections in the Hidalgo cellars, the Panesa Especial was identified as having unique properties by Manuel Nieves, cellar master, and his predecessors over 50 years ago. Made from 100% Palomino, the wine ages under flor for an average of 15 years, several years longer than the vast majority of finos. The flor is kept alive so long with infusions of young Sherry and added nutrients, but as it thins towards the end of its life, a light oxidation takes place. This extra aging shows in La Panesa's brilliant gold color and exceptional depth of flavor.
