Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Of all the New World wine countries, perhaps the one which has demonstrated the most flair for producing high quality wines - using a combination of traditional and forward-thinking contemporary methods - has been the United States of America. Oregon, Washington State and New York have all developed sophisticated and technologically advanced wine cultures of their own, and the output of U.S wineries is increasing each year as more and more people are converted to their produce.

California as a wine producing region has grown in size and importance considerably over the past couple of centuries, and today is the proud producer of more than ninety percent of the United States' wines. Indeed, if California was a country, it would be the fourth largest producer of wine in the world, with a vast range of vineyards covering almost half a million acres. Made from 100% Mondavi Heritage Clone 31 that gives tiny yields from small grape bunches. Intense blueberry, dark chocolate, graphite and tobacco leaf flavors are tightly wrapped in fine-grained tannins. A memorable wine that will drink best from 2030.

There are 603 cases of the 2021 Cabernet Sauvignon H.W.C., which comes from a single block planted to what is referred to as the Heritage Clone. It's densely colored and dark, with scents of black cherries and cassis, while the palate is full-bodied and concentrated, yet also finer and more elegant, silkier and longer on the finish than the other bottlings this vintage. The selection transcends the site and elevates it to another level.

Winery Notes

Named after the founder of To Kalon, H.W.C is produced from one single clonal selection of Cabernet Sauvignon within To Kalon. These vines were originally planted by Robert Mondavi, who was lured to To Kalon by the depth and richness of the wines he made from the vineyard in the 1960s. This incredibly low-yielding selection of Cabernet Sauvignon produces wines with high energy, a black-purple color, and exceptional aromatic and palate intensity—a high-resolution look at this noble variety. The inaugural vintage captures all the best attributes of 2021, with great balance, purity, and density. While not overly ripe or extracted, the wine has remarkable freshness, texture, richness, and length. Four extra months of barrel aging give it a high level of polish and a silky finish. H.W. Crabb came to California looking for gold but stayed to become one of the pioneers of Napa Valley winemaking. He named his estate To Kalon Vineyard, Greek for Highest Beauty, because of the lush bounty it provided. Soon, his wines became renowned around the world. And over the last 150 years, the vineyard’s consistent fine quality has made it one of the most coveted in the world.
