Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

California as a wine producing region has grown in size and importance considerably over the past couple of centuries, and today is the proud producer of more than ninety percent of the United States' wines. Indeed, if California was a country, it would be the fourth largest producer of wine in the world, with a vast range of vineyards covering almost half a million acres. The secret to California's success as a wine region has a lot to do with the high quality of its soils, and the fact that it has an extensive Pacific coastline which perfectly tempers the blazing sunshine it experiences all year round. Black currant, pencil shaving, subtle sandalwood, wet earth, forest floor and violet aromas follow through to a medium- to full-bodied palate with ultra-fine tannins that integrate perfectly at the end. A polished and caressing texture that goes on for minutes. The balance and drinkability of this Dominus is terrific, and it will age beautifully. A blend of 87% cabernet sauvignon, 9% cabernet franc and 4% petit verdot. From organically grown grapes. Very drinkable now, but will age beautifully.

The only one of the Dominus wines to show more than a hint of wood, the 2023 Dominus matured in 40% new French oak, leaving it marked by caramel and cedar overtones. Yet that oak aging is balanced by plenty of black cherry fruit and loamy earth notes, blending easily into a harmonious whole. Medium- to full-bodied, this rich, almost creamy blend of 87% Cabernet Sauvignon, 9% Cabernet Franc and 4% Petit Verdot finishes with velvety tannins borne on a finish that unfolds to reveal incredible persistence and complexity.

Based on 87% Cabernet Sauvignon, 9% Cabernet Franc, and 4% Petit Verdot and aged 20 months in 40% new French oak, the 2023 Dominus is absolutely gorgeous, with an incredible level of purity and refinement. Cassis, graphite, crushed stone, melted crayons, and floral nuances all define the aromatics. It's medium to full-bodied, with seamless, refined elegance, ultra-fine tannins, beautiful mid-palate depth, and outstanding length. This more charming, forward, and seductive style of Dominus will offer incredible appeal over the next 20-25 years or more. Drink 2025-2050.

The 2023 Dominus is a very pretty, surprisingly open-knit wine from this estate. Soft contours wrap around a core of pliant red/purplish fruit. Lavender, rose petal and gently spiced overtones caress the mid-palate and finish. I expect the 2023 will drink well with minimal cellaring, something that is rarely the case here.
