Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Of all the New World wine countries, perhaps the one which has demonstrated the most flair for producing high quality wines - using a combination of traditional and forward-thinking contemporary methods - has been the United States of America. For the past couple of centuries, the United States has set about transforming much of its suitable land into vast vineyards, capable of supporting a wide variety of world-class grape varietals which thrive on both the Atlantic and the Pacific coastlines. Of course, we immediately think of sun-drenched California in regards to American wines, with its enormous vineyards responsible for the New World's finest examples of Cabernet Sauvignon and Merlot based wines, but many other states have taken to viticulture in a big way, with impressive results. Oregon, Washington State and New York have all developed sophisticated and technologically advanced wine cultures of their own, and the output of U.S wineries is increasing each year as more and more people are converted to their produce.

Washington State

Since it began in the 1820s, wine-production in Washington state has gone from strength to strength, with many of the finest United States wines coming out over the past twenty years hailing from this region. Today, the state is the second largest US producer of wines, behind California, with over forty thousand acres under vine. The state itself is split into two distinct wine regions, separated by the Cascade Range, which casts an important rain shadow over much of the area. As such, the vast majority of vines are grown and cultivated in the dry, arid desert-like area in the eastern half of the state, with the western half producing less than one percent of the state's wines where it is considerably wetter. Washington state is famed for producing many of the most accessible wines of the country, with Merlot and Chardonnay varietal grapes leading the way, and much experimentation with other varietals characterizing the state's produce in the twenty-first century.

Made with 7% Cabernet Franc, the 2020 Curiositas Cabernet Sauvignon is dense, dark and red-fruited with juicy blackberry tones that sway with focus and power before revealing a rocky mineral essence and wilted red flowers. Full-bodied and firmly mineral, the wine is dense and chewy on the palate and will remain food-friendly for over 15 years. The wine ends with a tannic and firm finish that either needs food now or time in the cellar. Be patient. The wine rested for 20 months in 75% new oak barrels. Bravo! This is delightful. Just under 7,000 bottles were made.

Based on 83% Cabernet Sauvignon and 17% Cabernet Franc raised in 80% new French oak, the 2020 Cabernet Sauvignon Curiositas has a textbook Cabernet nose of pure crème de cassis, redcurrants, crushed stone, and lead pencil shavings, with some background, building minerality. Full-bodied on the palate, it has a seamless, elegant mouthfeel, good mid-palate depth, and a clean finish. Like many 2020s, it's more streamlined and narrow on the palate and finish but is clearly an outstanding bottle of wine.

The 2020 Cabernet Sauvignon Curiositas lifts up with peppery florals, savory grilled herbs and dusty red currant tones. This is silky and refined, with a savory core of tart wild berry fruits. Fine tannins frame the finish as this tapers off long and spicy, leaving a bitter tinge that puckers the cheeks.

Philosopher Thomas Hobbs once stated that “curiosity is the lust of the mind,” an idea that imagination and divergent thinking are a sought after experience, something that required inspiration. Here at The Walls, our inspiration is the goal of making curious wine, and that is consistently achieved with each vintage of the Curiositas. Situated in the very middle of the Red Mountain AVA, and planted on steep slopes and rocky soils, we turn to Heart of the Hill and Quintessence Vineyards to produce a deep and assertive, yet balanced and structured Cabernet Sauvignon. Those who enjoy Red Mountain Cabernet are expecting structured tannins and bold fruit, which is what we strive to deliver in the Curiositas. This wine provides a nice contrast to our Walla Walla Valley Cabernet, Bellamy, which is more feminine and floral on the nose and palate. A prime bottle for any Red Mountain Cabernet lover to add to their to cellar. An undeniable heavy-hitter, the Curiositas announces its presence as soon as the cork is popped, with heady aromas of super-ripe black cherry, damson plum, cocoa powder, black tea and toasted hazelnuts exploding out of the glass. The texture is rich, round, opulent and uber-mouth-coating, with a twist: its intense tannins and powerful, minutes-long finish.
