This powerful white shows real presence and substance, with a halo of smoke, saline and grilled herbs overlaying a core of crisp fruit -- apple, melon and quince -- all held upright by a steely beam of acidity. Fresh-cut chive and grilled oregano add to the savory complexity on the finish, which stretches way out with hints of salted caramel and verbena. Still tight, this needs time.
