Rich, ripe blackberries, dark cherries, mussel shells, cocoa powder and a chalky edge. Full-bodied and very flavorful, with nicely chewy tannins, lush berry fruit and a dense finish. Big but still fresh and juicy. A blend of 50% merlot and 50% bouchet (cabernet franc). Best after 2028.

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Coming from a designated parcel of clay and limestone soils, the 2023 Aromes De Pavie is equal parts Cabernet Franc and Merlot and was aged 20 months in 50% new French oak. Beautiful Pavie-like notes of red and black fruits, leafy tobacco, graphite, and spicy wood all emerge from the glass, and it's medium to full-bodied, with a pure, graceful mouthfeel, ultra-fine tannins, and a great finish. This is always a beautiful wine in its own right that will drink well for 15+ years. Drink 2026-2045.

The 2023 Arômes de Pavie is now sourced from a single plot on Pavie's limestone plateau. It possesses notable depth and texture, much of that coming from the 50% Cabernet Franc in the blend. Dark red cherry, blood orange, plum, menthol, licorice and mocha are front and center.

Fragrant and floral with some savoury herbal notes too as well as graphite and pencil lead - bright and expressive with lots of Cabernet Franc notes. Supple and bouncy, gorgeous tannins, present and chalky - really filling the mouth but they have a lovely thick texture with a pristine clarity of juicy, almost sweet and chalky blue and red berry fruit underneath. Hint of mint on the finish, ending long and lifted. Really carefully worked, complete and calm. Feels quite effortless and will be delicious when it’s ready to drink. Nice balance overall with structure, acidity, fruit and freshness. Ageing 18 months, 50% new oak, 50% one year.

92-93 2023 Aromes de Pavie comes from a separate parcel of wines outside Pavie. It has a spicy taste intermixed with raspberries and juicy yet strong fruit and a somewhat strict aftertaste with lots of tannins. This is a well composed wine that should start showing its best after 5-6 years in the bottle.
