Of all the white wine grape varietals, surely the one that has spread the furthest and is most widely appreciated is Chardonnay. This green-skinned grape is now grown all over the Old and New Worlds, from New Zealand to the Americas, from England to Chile, and is one of the first varietals people think of when considering white wine grapes. Most fine Chardonnay wines use a process known as malolactic fermentation, wherein the malic acids in the grape juice are converted to lactic acids, allowing a creamier, buttery nature to come forward in the wine. No grape varietal is better suited to this process than Chardonnay, which manages to balance these silky, creamy notes with fresh white fruit flavors beautifully.

Interestingly, Cote De Beaune produces more red wine than white wine, despite its white wines being so famous. The 2017 Puligny-Montrachet Village has a steely yet airy bouquet that does not quite entrance like the excellent Chassagne-Montrachet this year. But it is still very well defined, and it gains intensity with aeration. The palate is concentrated with a light honeyed note on the entry, veins of marmalade and quince betraying the slight in the vineyard this year. A lovely Puligny that will be difficult to resist in its youth.
