Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Of all the New World wine countries, perhaps the one which has demonstrated the most flair for producing high quality wines - using a combination of traditional and forward-thinking contemporary methods - has been the United States of America. For the past couple of centuries, the United States has set about transforming much of its suitable land into vast vineyards, capable of supporting a wide variety of world-class grape varietals which thrive on both the Atlantic and the Pacific coastlines. Of course, we immediately think of sun-drenched California in regards to American wines, with its enormous vineyards responsible for the New World's finest examples of Cabernet Sauvignon and Merlot based wines, but many other states have taken to viticulture in a big way, with impressive results. Oregon, Washington State and New York have all developed sophisticated and technologically advanced wine cultures of their own, and the output of U.S wineries is increasing each year as more and more people are converted to their produce.

Washington State

Since it began in the 1820s, wine-production in Washington state has gone from strength to strength, with many of the finest United States wines coming out over the past twenty years hailing from this region. Today, the state is the second largest US producer of wines, behind California, with over forty thousand acres under vine. The state itself is split into two distinct wine regions, separated by the Cascade Range, which casts an important rain shadow over much of the area. As such, the vast majority of vines are grown and cultivated in the dry, arid desert-like area in the eastern half of the state, with the western half producing less than one percent of the state's wines where it is considerably wetter. Washington state is famed for producing many of the most accessible wines of the country, with Merlot and Chardonnay varietal grapes leading the way, and much experimentation with other varietals characterizing the state's produce in the twenty-first century.

Made from 80% Cabernet Sauvignon with 16% Merlot and 4% Cabernet Franc, 2021 Cabernet Sauvignon Père de Famille is fresh, complex and floral with gobs of purity on the nose and picturesque aromas of spiced plum compote, blackberry reduction, succulent florals and elegant oak tones. Medium to full-bodied, the wine delivers a seductive and pleasurable mouthfeel with complex layers that show impressive depth and precision, with elegance and grace. Set to be released in March of 2024, this barrel sample is already begging me back for more. Get in line to capture any of the 10,800 bottles produced. (97-99)

The 2021 Cabernet Sauvignon Pere De Famille is based on 80% Cabernet Sauvignon, 16% Merlot, and the rest Cabernet Franc that spent 20 months in roughly 50% new oak. This deep purple-hued effort boasts a killer nose of pure cassis, leafy herbs, graphite, and smoke tobacco that give way to a medium to full-bodied, pure, gorgeously layered, seamless Cabernet that has more than a passing resemblance to a great Saint-Julien. Its balance is spot on, and while it deserves 4-5 years of bottle age, it already offers pleasure even today. It will have 2-3 decades of overall longevity.

The 2021 Père de Famille is dark and pleasingly herbal in the glass, wafting up with notes of cocoa, blackcurrant and dusty rose complemented by nuances of incense and white pepper. Silky and polished in style, with juicy acidity, this races across the palate with ripe red and black fruits, while sweet tannins mount toward the close. It finishes long and structured, with a slight bitter tinge that curls the tongue. Hints of licorice and sour orange linger.
