There’s a sense of precision to this elegant rosé Champagne, with its chalky base note and crisp, lacy mousse supporting a finely woven range of crushed white cherry and white raspberry fruit, smoked almond, ground ginger, anise and saffron. The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

Five percent red wine grown in Verzenay and Aÿ gives the wine its color, and perks up the fresh flavors of raspberries, complete with their seeds. The texture may be the wine’s best aspect: It’s creamy and lithe, transforming Bollinger’s power into elegance.

Deep red-berry nose, plus some nectarine, spice and candied-orange notes. Powerful and fresh, the hint of tannin from the red-wine component of the blend neatly balanced by the creaminess. Excellent textural complexity, then a long, delicately spicy and mineral finish.

The latest release of Bollinger's NV Brut Rosé is showing especially well, offering up complex aromas of sweet stone fruit, honeycomb, freshly baked bread and orange oil, followed by a medium to full-bodied, pillowy and vinous palate. Layered and concentrated, with a pretty pinpoint mousse and ripe but racy acids, it concludes with a long, expansive finish.

Pretty notes of strawberry and cherry are trimmed in yeast, quinine and citrusy nuances where the latter is picked up by the delicious and vibrant middle weight flavors where the supporting mousse is dense and moderately fine while the finish is clean, dry and complex. For my taste this is drinking perfectly now though it could easily be held if desired.

Bright orange-pink. Fresh red berries and tangerine on the spice- and smoke-accented nose and in the mouth. Sappy and expansive, offering juicy raspberry and bitter cherry flavors and a touch of toasty lees. Tightens up on the long, mineral-driven finish, which leaves a chalky mineral nuance behind.

A very similar blend to the Special Cuvée, this includes just 6% red wine from the Côte aux Enfants in Aÿ. Creamy, steely red fruit scents display a mineral character supported by subtle woody depth. This is tight and fresh in the mouth, displaying pure red fruits, its oak backbone betrayed by notes of black pepper and its full texture.

Bronze tones combined with the intense depth of a great red wine. On the nose, red berries: hints of red currant, cherry and wild strawberry. A spicy touch. On the palate, flavors of wild berries and a subtle combination of structure, length and vivacity, with a tannic sensation from the red wine addition. Bubbles as fine as velvet.
