An austere blanc de noirs, offering a chalky profile of lemon leaves, wild strawberries and red currants with buttery custard depth. Medium- to full-bodied with fine bubbles. Quite substantial on the midpalate yet balanced and focused, with a tingling finish. Sourced mainly from Montagne de Reims. Disgorged June 2024. Drink or hold.

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

The current release of the NV Champagne Grand Cru Blanc De Noirs Extra Brut is built around the 2018 vintage, with the addition of 12.5% wine from the estate's perpetual reserve going back to 2015. Entirely made from Pinot Noir from the Grand Cru villages of Verzy, Verzenay, Mailly, and Bouzy, it pours a medium straw/copper-tinged hue and shows off a refined nose of kirsch, honeycomb, orange blossoms, and toasted brioche. The palate is juicy and inviting, with a lot of finesse, pure, compact richness, and a long, stony finish. The mousse is fine, adding an accent of spice and lifting its spine of acidity. It is a fantastic Blanc de Noirs to enjoy over the next 10 years. Disgorged in November 2022 with 3 grams per liter dosage.

One of the most harmonious cuvées in Bruno Paillard's cellar this year, the 2019-based NV Blanc de Noirs Grand Cru was disgorged in June 2023 with a dosage of three grams per liter. The wine opens from the glass with a bouquet of cherry, grapefruit and pomelo, mingling with chamomile, nashi pear and a subtle touch of vanilla. The palate is medium- to full-bodied, simultaneously concentrated and elegantly muscular, combining texture with energy. A core of succulent fruit is supported by brisk acidity, and the wine concludes with a long, chalky finish. The blend draws from Verzenay, Verzy, Mailly-Champagne and Bouzy.

From four grand cru villages around the Montagne de Reims, this Champagne has a toasty aroma and a rich, structured style. While dry, it is also rich and full, the wine's fruit now softened with some bottle age. Drink now.

Winery Notes

APPEARANCE: Bright gold with copper flecks; a fine and active effervescence. NOSE: Lively and velvety, with red rose petals, Bigarreau cherries combined with pink grapefruit and Timut pepper. With time, a bouquet of sweet spices and a sensation of great freshness progressively appear. PALATE: The chiselled and chalk structure found on the nose is echoed on the palate. A striking and mouth-watering attack, where the salinity and delicacy of the fruit intertwine in an umami sensation, which calls for food. The depth of this wine is gradually revealed around notes of cherry flesh and a slice of kumquat. The good length is testament to the faithfulness of this wines to its terroir.
