Varietal

Champagne Blend

The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

Region

Champagne

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

James Suckling

Focused and austere yet refined and complex with a chalky, mineral perfume, showing lemon zest, linden blossoms, strawberries, pastry depth and whiffs of butter. Medium-bodied with fine mousse and creamy texture, offering zesty acidity, a saline palate and a long, precise finish. Disgorged April 2022. Drink now.

Boasting a bright golden/straw color, the NV Champagne Cuvée 72 Extra Brut is the same base wine as the Première Cuvée but aged for an additional three years in the cellar following disgorgement, for a total of six years aging prior to release (or, as the name suggests, 72 months). The nose offers more complexity and depth by comparison, revealing aromas of orange marmalade, toasted hazelnut, croissant, honeycomb, and apricot. It fills the palate with a full-bodied richness, a pillowy mousse, and a delicate, savory flourish of salted praline on the finish and back palate. It delivers wonderful intensity and depth throughout and shows how this cuvée can certainly benefit from cellaring. Drink 2024-2032. Disgorged March 2020.

Vinous Media

The NV Extra Brut Cuvée 72 is a solera-style blend that sees three years of aging in bottle and then another three years in bottle post-disgorgement, prior to being released. Creamy, resonant and expressive, the Cuvée 72 presents lovely notes of pear, dried flowers, mint, spice and pastry. Disgorged: March 2020.

This is same blend as Paillard's Première Cuvée but with longer bottle aging before release. The result is a Champagne that has a toasty edge and honeyed flavors to balance the citrus and white floral aroma. Drink the wine now.

Wine Advocate

Based on the 2017 vintage—incorporating some 28% reserve wines—and disgorged in March 2021 with a dosage of 5.5 grams per liter after 36 months sur lattes, the latest release of Bruno Paillard's NV Cuvée 72 is composed of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier. Having matured three years post-disgorgement, the wine is already articulate, unfurling with aromas of pear, orange zest, quince and a faint hint of honeysuckle. On the palate, it is medium-bodied with taut musculature, enlivened by racy acidity and culminating in a chalky finish. This is a considerable effort from one of the estate’s—and indeed Champagne’s—most challenging vintages. While slightly on the leaner side, it avoids austerity. Essentially, it is the familiar Première Cuvée, distinguished here by extended maturation in bottle.

Winery Notes

APPEARANCE: A bright, golden hue flecked with yellow and with fine bubbles. NOSE: Primary notes are slightly dominated by citrus, opening gradually into white flowers (orange blossom, hawthorn, light acacia…). The amateur with enough time will also discover notes of spice, saffron or cedar wood. PALATE: The attack is both lively and enveloping. The nose is mirrored, and joined with flavours of redcurrant jelly and black fruits. The creamy texture displays slightly honeyed notes and dried fruits. The finish is very pure, long and generous.
