By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

Originally conceived as a project focused solely on Chardonnay, Capensis has now introduced its first red wine, the Capensis 2023 Stellenbosch Cabernet Sauvignon Silene, which I tasted at the Cape Town 2025 wine fair. Sourced from Helderberg, located between Somerset West and False Bay, the wine is a blend of 85% Cabernet Sauvignon, 9% Merlot and 6% Cabernet Franc, though it is varietally labeled as Cabernet Sauvignon. Dark fruit flavors are layered with light spice and a subtle note of grilled herbs or lavender, all carried by the freshness that defines this maritime-influenced site. Aged for 14 months in French oak with 35% new wood, the wine reflects a season marked by significant rainfall in 2023, making careful vineyard work essential on the Helderberg’s wind-cooled slopes and well-drained decomposed granite soils.

Winery Notes

Blueberries and cassis confidently lead the flavor profile, with black olive tapenade weaving in a touch of savory complexity. The wine reveals a concentrated core, enveloped by layers of deep, velvety dark fruits, accented by subtle dark chocolate notes and the alluring fragrance of a well-worn cigar box. The fine-grained tannins impart a soft and smooth texture, leaving a wonderfully mouth-coating finish that lingers on the palate.
