A big and powerful wine, with tannins that are compact and dense. The dryness of the tannins go right to the core, surrounded by chocolate, sweet fruit and dark berry flavors. The wine is well structured, big and bold, with plenty of firmness promising aging.

Varietal

Red Bordeaux

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act – the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Appellation

Pauillac

Pauillac, a prestigious appellation within Bordeaux's Left Bank, stands as a vinous crown jewel renowned for its exceptional red wines. Home to some of the world's most illustrious châteaux, including Lafite Rothschild and Latour, Pauillac is synonymous with Cabernet Sauvignon-driven blends. What makes Pauillac unique is its impeccable terroir, characterized by deep gravel soils and a maritime influence from the Gironde estuary, creating wines of unparalleled power, structure, and longevity. Decanter

Shows more red fruit than black with a hint of smoke, leather and game. The texture is lively and fresh. It is somewhat shorter than Latour can be, but not overly so. This is one to drink while waiting for other recent vintages to open up. The overcast, lukewarm weather in 2007 delivered a wine with less intensity and power than other recent vintages, but one that drinks agreeably well at this earlier stage. Merlot was picked beginning 21st September and the Cabernets from 4th October. Drinking Window 2022 - 2042.

Wine Advocate

Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Latour was late-released last year, and I reviewed it at that time. This bottle reaffirmed my remarks from a few months ago albeit here within the context of all the other First Growth. I noticed that it has slightly more intensity than the Lafite-Rothschild, a touch of menthol infusing the black fruit, certainly more exotic than the Lafite or Mouton with that subtle hint of black olive. The palate is medium-bodied with fine tannin. There is good muscle and weight to this Latour, with impressive tension and energy on the saline finish. It will drink well over the next 15 years, possibly longer. Tasted February 2017.

Vinous Media

Surprisingly, the 2007 Latour has a bolder and more outgoing bouquet than other vintages from this era, adorned with plush blackberry, blueberry and boysenberry fruit, slightly more floral than its peers. There's a fine definition here. The palate is medium-bodied with supple tannins, very well balanced, although not the most complex in the line-up. It tapers in a little toward the finish and is more austere, but it is still very pleasurable and one of the more approachable vintages of this era. Tasted blind from double magnum at a 20-year retrospective at the château.

Wine Spectator

Offers floral and berry notes, with currant and licorice. Full-bodied, with a sweet core of fruit. There's silky tannins and a fresh, fruity finish. Reserved and balanced. Best after 2012.
