There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

Offering cedary notes with some hints of black olive tapenade, grilled meats, spice box and wood with black and red currants, this wine seems fully mature, lusty, rich and undeniably a major success in this vintage. The tannins are largely resolved and the wine is drinking beautifully, so there is no reason to defer your gratification for this wine. Drink now through 2025.

Medium to deep garnet-brick in color, the 2002 Pavie waltzes out with ready-to-go notes of stewed black and red cherries, dried mulberries, and damp soil followed by touches of unsmoked cigars, wild sage, and leather. The medium to full-bodied palate delivers a chewy texture and well-knit acidity to support the savory-laced black fruits, finishing on lingering ferrous note.

Ruby-red. Aromas of black raspberry, tobacco, minerals and mocha. Suave, silky, lush and round; quite full but with lovely inner-mouth energy and aromatic character. Seamless, deep flavors of redcurrant, fruitcake and minerals. Finishes with excellent mounting persistence, the dusty, fine tannins buried in fruit. A terrific effort for the vintage, and likely to age gracefully over the next decade or two.

This is sneakily good for the vintage, with a soft, mature edge to the mix of mulled plum and black cherry fruit, which gives way slowly to cedar, vanilla and tobacco notes through the finish. Has a light menthol backdrop and a slight grainy edge to the structure. A terrific effort for the vintage.--Non-blind Pavie vertical (March 2017). Drink now through 2025. 7,500 cases made.
