Straight away the deep, rich colour tells you that this is a sexy, powerful wine, barely hitting the next stage of evolution at seven years old. The nose is rich and spicy, and carries through perfectly onto the palate of exotic, spiced plum flavours with a tarry, liquorice edge. Great confidence on display. 67% Cabernet Sauvignon, 33% Merlot. Drinking Window 2017 – 2045.

There are few regions in the world with stricter regulations in regards to wine production and grape varietals than those found in Bordeaux, France. Here, in the home of the world's finest wines, the type and quality of grapes used is of utmost importance, and the legendary wineries which work on the banks of the Gironde river have mastered the careful art of juice blending to find the perfect balance for their produce. Whilst there are six 'official' Bordeaux grapes, the two key varietals for almost every fine Bordeaux wine are Cabernet Sauvignon and Merlot, and with good reason. Whilst Cabernet Sauvignon grapes are renowned for their acidity and astringency, strong fruit and spice flavors and full body, Merlot grapes are notably rounded, soft, fleshy and lighter on tannin. The combination of these two varietals, along with a small percentage of (commonly) Petit Verdot or Cabernet Franc, is the perfect balancing act â€“ the two grape varietals cancel out each others weaker points, and accentuate all that is good about the other.

The 2009 Pichon-Longueville Baron has a medium to deep garnet color and a very meaty/savory nose over a core of sweaty leather, baked blackberries and plums with notions of crème de cassis, sautéed herbs and black olives coming through with coaxing. Full, rich, concentrated and decadently fruited in the mouth, the palate has beautifully plush tannins and an herbal lift on the long finish.

This delivers a massive core of black Mission fig, black currant paste and roasted fig fruit, backed by alder wood, bay leaf, singed cedar and maduro tobacco. The 2009 Pichon Baron is similar to the previous bottle. Precocious black fruit mixes with graphite and black truffle. A light marine influence becomes more evident with aeration. It couldn't come from anywhere but Pauillac. The palate is beautifully balanced with a seam of graphite interwoven through the layered black fruit. This is nicely poised for a 2009 Left Bank that seems to be slowly becoming more classically styled in recent months. Wonderful. Tasted at Burns & German's dinner to celebrate The Complete Bordeaux Vintage Guide book at Medlar.
