Cabernet Sauvignon

By far and away the most recognized and widely grown red wine grape varietal in the world is the Cabernet Sauvignon. First cultivated in the 18th century in France, this wonderful cross of Cabernet Franc and Sauvignon Blanc grapes has long since been the most important varietal for red wines across the globe. Now grown everywhere from its native France to the furthest reaches of the New World, Cabernet Sauvignon is adored and prized by wineries for its hardiness and resistance to rot, as well as its large and sharp flavors and wonderful capability for fine aging Indeed, many of the finest wines of history and the modern age would be simply unimaginable without Cabernet Sauvignon grapes, with the famed wineries of Bordeaux and other important regions using it as the primary grape in their oak aged produce. High tannin levels, acidity and powerful flavors are the characteristics most commonly associated with this varietal, however, when blended and slowly aged, it is capable of a world of flavors and aromas unmatched by any other grape.

California as a wine producing region has grown in size and importance considerably over the past couple of centuries, and today is the proud producer of more than ninety percent of the United States' wines. The 2015 Cabernet Sauvignon Hershey Vineyard (this is the coolest site they work with) from Howell Mountain has a slightly fresher, more black fruit-driven style in its espresso, crushed rocks, scorched earth, and chocolate-tinged aromas and flavors. On the palate, it’s beautifully full-bodied and rich, with a seamless texture, perfectly integrated acidity and tannins, and a great finish. It needs 4-5 years of bottle age but is another thrilling wine.

Blackberries, black olives, licorice and dark fruit. Full-bodied and layered with velvety tannins that are polished and focused. Juicy and gorgeous.

The 2015 Cabernet Sauvignon Hershey Vineyard is a dark, mysterious wine. Black cherry, new leather, incense, mocha, licorice, lavender and espresso fill out the layers. There is a bit more oak influence here, but it works quite well with the style and character of Howell Mountain. This dark, sumptuous Cabernet Sauvignon is superb. What a gorgeous wine. This is the best showing yet for the 2015 Hershey since I tasted it in barrel nearly ten years ago.

Deep garnet-purple colored, the 2015 Cabernet Sauvignon Hershey Vineyard leaps from the glass with blueberry preserves, menthol and espresso notes giving way to notions of baking spices, black pepper and cedar chest. Medium to full-bodied, vibrant and expressive, if has a firm frame of velvety, approachable tannins and wonderful vivacity, finishing long and fruity.
