The sparkling wines of Champagne have been revered by wine drinkers for hundreds of years, and even today they maintain their reputation for excellence of flavor and character, and are consistently associated with quality, decadence, and a cause for celebration. Their unique characteristics are partly due to the careful blending of a small number of selected grape varietals, most commonly Chardonnay and Pinot Noir. These grapes, blended in fairly equal quantities, give the wines of Champagne their wonderful flavors and aromas, with the Pinot Noir offering length and backbone, and the Chardonnay varietal giving its acidity and dry, biscuity nature. It isn't unusual to sometimes see Champagne labeled as 'blanc de blanc', meaning it is made using only Chardonnay varietal grapes, or 'blanc de noir', which is made solely with Pinot Noir.

The beautiful rolling hillsides of the Champagne region of France have, for hundreds of years, been producing many of the world's most famous wines. The sparkling white wines to come out of Champagne's prestigious wineries have conquered the world, and are drank in celebration across the globe. The vast majority of the region is under vine, and grows predominantly Chardonnay and Pinot Noir grape varietals, which are usually blended together by master wine-makers in order to make their recognizable and widely loved produce. The north-easterly region of Champagne has a relatively cool climate, and quite a lot of rainfall, making it far from ideal for ripening grapes. However, the presence of heavily forested areas in the region helps maintain a balanced temperature, and the generations of expertise the wineries hold clearly produces excellent results in spite of the climatic problems.

The 2004 Champagne Plentitudes 2 is a stark contrast to the 2003 vintage and offers a more compact and linear expression, with energetic tension and persistence. Composed of 38% Chardonnay and the rest Pinot Noir, the nose is flush with wet stone reminiscent of great Chablis, along with white nectarine and white flowers. The palate runs seamless with a super-fine mousse, vibrant peach orchard fruit, and a silky mineral texture. This may well prove to be the longer-lived of the two wines. Drink 2024-2044.

94-96 Give this wine time — at least 25–40 minutes in the glass for full expression. From the very first moment, the mousse is pristine: fine, elegant, perfectly integrated. The wine is strikingly fresh and precise both on the nose and the palate. At first, the profile is driven by fruit — ripe stone fruits intertwined with subtle tropical tones. With air, it shifts toward deeper layers of brioche, melted butter, and gingerbread. A Champagne built for patience, already impressive today yet clearly destined for greater harmony with time.

The 2004 Dom Pérignon P2 is drinking beautifully on release, wafting from the glass with aromas of sweet orchard fruit, fresh peach, pastry cream, buttered toast and cotton candy that display a less reductive profile than the original disgorgement. Medium to full-bodied, pillowy and charming, with an ample, enveloping core of fruit, succulent acids and a pretty pinpoint mousse, it concludes with a long, sapid finish. Forward and giving, there's no obvious reason to defer gratification.

The extended lees ageing given to P2 has rendered this open, giving vintage with an extra degree of savoury intrigue; it’s deeply umami and nutty, almost meaty in savour on the one hand, yet also beautifully ample in fruit with sweet plum, lime and caramelised peach. It’s a fascinating counterpart to the standard release, although the differences between them are perhaps more stylistic than purely qualitative.
