Savagnin is a rare, ancient white grape variety primarily cultivated in France’s Jura region, where it is best known for producing Vin Jaune (Yellow Wine). It is genetically linked to Traminer, making it a close relative of Gewürztraminer, though it expresses itself quite differently. Thriving in Jura’s cool climate and limestone-rich soils, Savagnin develops high acidity and a strong mineral backbone, making it well-suited for both oxidative and non-oxidative winemaking. What makes Savagnin truly unique is its role in Vin Jaune, an iconic wine aged for at least six years and three months in oak barrels under a layer of yeast (voile), similar to Sherry but without fortification. This aging method imparts intense nutty, curry spice, and dried fruit aromas, with remarkable complexity. In fresher styles, Savagnin exhibits citrus, green apple, floral, and mineral notes. It pairs exceptionally well with Comté cheese, rich poultry dishes, and mushroom-based cuisine, offering a truly distinctive drinking experience.
